茅台酒堪称国酒,享誉世界。茅台酒不仅是酒,更是中国优秀文化的国粹和传奇。到底是什么能够让茅台酒成为第一国酒,为何会有这么多人如此追捧茅台酒,它又是如何酿造出来的呢?解惑这些疑问,一直是我心中的梦想。

11月30日下午3点半,应贵州民族酒业(集团)销售有限公司总经理李君剑邀请并亲自陪同,中国国际新闻杂志社常务副总编兼首席记者尚红军携安阳市正大汽贸集团董事长李文亮、安阳水冶铁合金企业刘总、贵州华联辉安阳经销部经理张总等一行六人,由新郑机场乘机前往茅台镇进行考察及文化交流。

总介绍,茅台镇是黔北名镇,赤水河从中间流过,古色古香的仿木结构建筑鳞次栉比,分布在河水两侧的山坡上,自古以来就是“川盐走贵州,秦商聚茅台”的水陆交通要地,具有久远的历史和文化。东南方这边是古镇的主体,红军四渡赤水纪念园则建在河对面。赤水河两岸的山坡上,房屋依山而建,从山脚直到山巅,层层叠叠,俨然就是一座小山城,基本都是中式建筑,红柱白墙青瓦,还有廊柱飞檐风火墙等陪饰,古色古香。茅台镇集古盐文化、长征文化和酒文化于一体,不愧为“中国第一酒镇”。

吃过早饭,李总、赖总等陪同我们前往国酒茅台酒厂参观。一路上,穿过车水马龙的街道,沿路两旁全部是酒铺、酒店。一路上坡,进入一个标有国酒茅台四个大字的鼎状的棕红色牌坊,一旁的石墙上雕刻着茅台酒“12987”生产工艺的文字。再往里走来到一个广场,茅台酒厂就座落茅台镇的这一片山顶上。正面是茅台酒厂的主楼。

之后,我们来到了茅台镇核心景区1915广场和红军四渡赤水纪念园。  1915广场上最引人瞩目的就是那个巨大的金色雕塑。走近仔细观看,才知道是一个摔破的酒坛,诉说的是1915年茅台酒在巴拿马万国博览会获得金奖的故事:怒掷茅台震国威,酒瓶一碎惊万国。酒瓶内壁刻有文字,简要记述了茅台酒获奖的过程。沿着1915广场河边下行,可以看到对面山坡上的红军四渡赤水纪念园,还可清楚地看到茅台渡口的纪念埤。其间有一座铁索桥,叫红军桥。桥座下的雕塑,精美雄伟。我们一行走过红军桥,一路上亭台楼榭,喷泉水池,景色优美,三角梅在这里开得很艳丽。来到茅台渡口,俯瞰赤水河,河面较宽、河水清澈。

红军四渡赤水纪念塔位于茅台镇朱砂堡上,帆船造型,占地五亩,于1995年修建。纪念园主要景观有:红军四渡赤水纪念塔、怀红亭、茅台渡口纪念碑。再现了当年红军迂回转战四次渡过赤水河的激烈场景:1935年3月,中央红军主力从遵义西进经过仁怀,辗转奋战,迂回制敌,四渡赤水河,以灵活机动的战略战术打破了国民党妄图围歼红军于川、滇、黔边境的计划,从被动转向主动,为长征的胜利奠定了基础。为纪念这一伟大胜利,一九九五年红军长征胜利六十周年之际,仁怀市政府在当年红军三渡赤水河的茅台渡口朱砂堡的山顶上修建了红军四渡赤水纪念塔。塔高2万5千毫米,意为纪念惊天地泣。塔身由四片浪柱形的建筑依次错落重叠而成,象征中央红军四渡赤水出奇兵的丰功伟绩。纪念塔北侧有四幅浮雕,再现了当年红军四渡赤水时的雄伟壮观景象。大家深深叹服毛主席用兵如神的战略战术。

中午,在李总的特意安排下,从茅台镇驱车十多公里去吃正宗的紫云牛肉火锅~仁怀九大名菜之一。一盆热气腾腾的火锅牛肉,一盆干锅牛肉以及腊肉、加上腊肉、各种青菜野菜等满满一桌。火锅里除了牛肉,还有牛筋牛皮牛下水,吃起来香、脆又鲜嫩,味道名副其实。

李君剑总经理不愧为酱酒专家,一路上滔滔不绝地向我们介绍了茅台酒的历史、茅台酒酿造工艺等许多知识。茅台酒的生产全是人力手工作业的,其中踩麯必须是工人挽起裤腿赤着脚踩的,而且据说要用十八岁的俊俏少女来踩麯,因为其身体重量最合适。贵州民族酒业(集团)销售有限公司于2017年成立,其前身为1984年由统战部民主宗教事务委员会创办、茅台镇酱香酒会副会长创建而成的国有企业。酿造基地在茅台镇赤水河畔,与国酒茅台同享得天独厚的自然条件,共同接受赤水河的恩泽。酒厂一直沿用茅台镇传统工艺,严格遵循茅台镇传统工艺,坚持采用茅台镇特有的红缨子高粱、本地优质小麦、赤水河清凉甘甜的河水酿造,严格把握和控制每一道工序,确保每一瓶酒的高品质,只做老百姓喝的起的纯粮酒茅台镇酱香酒。当地的红缨子高粱俗称小红梁,是赤水河流域特产的一种有机粳高粱。它是茅台镇酱香型白酒的关键酿酒原料,因不同于其他高粱,粒小、皮厚、坚实、饱满。茅台酒所代表的酱香酒其生产周期历时一年,七次精酿,只有红缨子高粱才能历经九次蒸煮,谓之“回沙”,其次。茅台酒是整粒高粱参与发酵,约20%破碎率,此类传统工艺的酱香酒,谓之“坤沙”(整粒之意)。公司践行“崇道、务本、敬商、爱人”的核心价值观,打造“君品”文化体系,外抓市场、内抓管理,企业发展总量和质量、速度得到较快提升,所生产的酱香型白酒在市场上广受欢迎。全国许多客商、企事业单位在该厂定制酱香酒。厂区占地总面积380亩,固定资产3.6亿元;拥有6条全自动灌装生产线,日可灌装20万瓶成品酒,年产优质酱香白酒20000吨,原酒贮存量更是超过十万吨;拥有职工一千多人,技术人员数百人,是茅台集团、贵州商业银行的战略合作伙伴。正在兴建中的十万吨标准原酒储存仓库,完工后将成为茅台镇除茅台酒厂外最大的原酒贮存基地。
